I am at the point where I want to upgrade my current drives in my DNS-321. However I don't have enough space to backup the entire contents of the drive. So my Plan was to get two 2TB drives and install them on the NAS.
Now I was planning to plug my old drives directly to my computer via SATA using a windows XP machine. Is there any programs out there that will enable me to read EXT2/EXT3 file systems so that I can copy the contents back to the NAS?

See if one of these work for you:
http://sourceforge.net/projects/ext2fsd/

I've used ext2fsd on XP Pro with drives formatted by the 321 as EXT2 without RAID and it worked well.
