I have two WD Green Drives (JBOD) in my DNS-321 and want to replace them with two WD Black Drives. The two WD Green Drives that I will pull out have a lot of aac, iso, and mpg files on them. Will I still be able to access these files through an eSATA dock, or will Win7 be unable to read them? (Hoping for the easy way out.)

The DNS-321 formats your drives as either ex2 or ex3, which cannot be mounted natively by Windows. You could either install software that allows Windows to read these formats or boot your machine with a Linux live CD that allows you to read and write both ex2/ex3 and NTFS.
The above won't work if you're using JBOD. You would need to copy your data off the DNS-321 before replacing the old drives.
