Changing drives

Hi,
I have a 321 set up with 2 - 500gig drives in RAID 0 format. and working well. I want to take those 2 drives out, put in a new single drive and take the unit to a friends and back up his system. Then I want to put back my 2 original RAID 0 drives back in the 321. Is this doable without losing data?

RAID1 is for disk redundancy - NOT data backup - don't confuse the two.
