Possible to just assign IP address and subnet mask while leaving the gateway field blank?

I don't see the option under Network Settings although, funny enough, when you click Network Settings it seems that there's a gateway field there for a second before it refreshes to the usual page.

I don't believe so.  It usually serves it's own address as the gateway in dhcp.  The only ways around it are to:
A: Use a different dhcp server.
b: Manually configure all clients with a static ip.
