So I switched over to channel 3 (because of what I was seeing in inSSIDer) and got better results.  (Still using N-only)  I've been running ping -t for about 4 hours and I'm seeing an average time of 6ms on one laptop (Dell Latitude E5510).  My other laptop (HP 6910p) gets VERY different results.  Ping times average 19ms.

That's not so bad, but inSSIDer on the HP shows several networks that look like very big sine waves that easily go up to 0dB.  My wireless network bounces around between -50dB and -45dB.

On the Dell laptop all of the neighbor's wireless networks stay at least 10dB below mine.

The Dell is only a few months old, but the HP is about 2.5 yrs old.  Is there any explanation for the different results I'm seeing in inSSIDer?

I would suspect the HP NIC drivers, or not set to full Duplex.  If your NIC's are USB (which are inherently slow) I would also suspect the USB drivers.  Any other USB devices on your laptop BUS will slow down all packets through the USB so if you have say a USB keyboard, mouse and a "splitter" on your USB, you will have virtually no speed.
