If i install 2 x 1.5tb drives in a raid1 config can i tell it to format it as 1tb and the other 500g as a seperate volume but keeping the raid1 format.

I want to share certain directories with the kids such as music / video's / pictures in a read only format but there is no need for them to have access to back up data / work data directories.

Ive tried doing it with users and that worked to a point but they are still able to just go to network and click volume 1 and access it all.

Yes. It will create a Volume_1 which will be your RAID 1 of 1 TB and the remaining space will create a Volume_2 1TB JBOD volume.

Hi,
If you want to go to the trouble of reformating and reinstalling all of your data / files.  Your idea will work, assuming you put the music /video/ pictures on a seperate drive, but if you simply create new shares of just the folders you want the children to have read access tom and only those folders, your problem is solved in a few minutes.  If the kids have access to your other folders, you must have given them access, perhaps to the entire Volume_1.  There is no need for all of that extra time and work.  Hope this helps.  Good luck.

Thanks i'll have a mess about with the file sharing again, ive managed to map video's / mp3 / and kids stuff but it doesnt stop them from accessing the entire volume via the network button even though ive set access for just the above mentioned directories.

Will back up everything before messing about to be safe

No need to create a Volume, just folder permissions. At first it will be a try and error process until you get familiar with the interface and how it works.
it will be a combination of creating network shares/users/groups, it will all depend on your requirements.

example, I do have mine set with:
\NAS\all for all users RW
\NAS\user1 for user1 RW
\NAS\user2 for user2 RW
\NAS\user3 for user3 but he can see RW the other users' folders as well.

Also, just because a folder is listed, does not mean they have access to it. If done properly, it will ask for credentials when it is access.

I have folders inside volume 1 but cant seem to find a option to share them, all its letting me do is share the complete volume 1, do i need to install some application to let me have more control ?
Ive tried making groups but same again can only select volume 1 and not the sub directories.

When you go into set a new network share interface to create a new share, hold the mouse cursor on the word "Volume_1" and click once.  This should cause the sub-folders in Volume 1 to become visible and drop down below.  This will allow you to then select them and create the new shares you want.  Good luck.
