What is the best Audio and Video format I should be using to play avi's from my computer to DSM-750 using Media Centre?

AVI will not play natively on the 750 as a MCX.

the MediaCenter should transcode avi (but you will have virtually non-existant FF/Rew functionality).

The best format is to convert to dvr-ms or wtv formats.  These maintain excellent FF/REW functionality and don't require transcoding.
