I have applied all the suggestions and after MUCH trial and error I have learned some things and even discovered a work around to get my 343 partially functional.
1 - The "save settings / don't save settings / etc." buttons stay grayed out (see my post above) until there is a valid volume on a formatted drive. I was under the assumption they should be available as soon as a drive is installed. Apparently not so.
2 - the DNS 343 has issues with Seagate ST2000DM001 Advanced Format hard drives. At least mine does (DNS 343, B1, firmware 1.05, 4 x ST2000DM001 drives)
Neither RAID 5 nor RAID 1 work correctly. Even if I'm able to get the drives formatted without hanging, upon reboot the 343 loses a drive, then wants to re-sync / reformat the lost drive. Leaving me waiting (potentially) days for it to sync.
3 - Standard mode works as advertised after I discovered a work around. You have to jump through some hoops but it does work. If you try and format all 4 drives at once from the web UI, the process hangs and fails to finish. To get around this problem I did the following :
1 - Power up the 343 and set the OLED screen stay-on time to 15 minutes then turn off the device.
2 - Install one ST2000DM001 hard drive - unformatted or formatted as something other than EXT 2 or 3.
3 - Power up and log into the configuration utility.
4 - Format the drive. ***This is where things get funky.***
Follow the prompts to the initialization page. The web UI will hang / crash at 0% done. Not to worry. The 343 is formatting the drive in the background. Only the web UI has crashed. Use the "next" button on the front of the 343 to monitor it's progress. This is why we set it to 15 minutes in step 1.
5 - Once at 100% formatted, give it another 10 minutes to finish up any unseen background processes.
6 - Turn off the device by holding down the power button (If you re-start the 343 at this point you will have a shiny new volume to play with).
7 - Repeat steps 2 through 6 for every additional drive you want to install.
While not elegant, it did work for me.
I am not terribly happy that I had to spend a ton of time and energy to get this thing working (marginally) when my other 343 (also B1, v1.04, and 4 x ST2000DL003 drives) worked properly from day one. The fact that it does work suggests that it is a firmware rather than hardware problem. I'm hoping that D-Link put a bit more work into the firmware to get these drives fully compatible since Seagate is a huge HD player, and AF drives are the future. Like it or not.
