Problem Transfer Data Between 2 Drives

I have looked and I cant find a way to transfer data between two drives. I want to be able to do this so I can replace drives. also I cannot find a way to replace only one drive (only formatting one drive), its only format both drives. so I would loose all my data. is there a way to do this? thanks guys
